I love the thought of me loving football…I really do!
Sometimes in life I feel like I have a long list of "if only's"…If only I had done this or that I would be happy…If only I had been able to buy that outfit…I would be happy.
If only I could go to that island, I would be happy!
Well…let me tell you, I do think those things would be fun and make me happy for a time... I won't lie about that! But one of the things that truly does make me happy is cooking for friends and family.
Cooking for normal life and cooking for fun events, including the Super Bowl make me happy!
As was the case this weekend…it was all of the above!
And a huge disclaimer here…happiness is relative! And relatives definitely make me happy!
The super bowl is always an occasion to make something that I can truthfully say…"If only you could've been here for dinner"…you would be happy! Happy in your tummy for sure!
If you could've tasted this Buffalo Chicken Chili you would be happy! It was divine! I doubted myself at first but I promise... I can't wait to make it again! Please take my word for it!
I dabbled with a few recipes and eventually came up with my own.
I began with the recipe above and ended up with this. And I promise you…if you will try it….
You will be Oh…So…Happy!
The hardest part of this recipe was simply cutting up the onions, celery and carrots to sauté…the rest was a piece of cake!
By simply adding shredded, cooked chicken and a few other ingredients…we had a yummy meal that started off our long weekend and even had leftovers to send back to Auburn with Miller!
What a blessing to be able to do that!

Top it off with crumbled Blue Cheese and wow…you will not even believe how good this Buffalo Chicken Chili is!
And then…to finish it ALL off...
We had these Rice Krispy Treats! Truly, a favorite of my family from way back!
You definitely need to try these out!

Buffalo Chicken Chili
2 Tablespoons Olive Oil
1 large onion, diced
1 large carrot, peeled and diced
1 rib celery, diced
3 cloves garlic, minced
5 Tablespoons Chili Powder
2 teapsoons ground cumin
6-7 chicken breasts, cooked and shredded
1 28 oz. can crushed tomatoes
2 15 oz. cans tomato sauce
1 can kidney beans, drained and rinsed
1 can great northern beans, drained and rinsed
1 1/2 Cups frozen shoe peg corn
1 Cup or more chicken broth
dash celery salt
1 teaspoon dried cilantro
1/4 -1/2 Cup Wing Sauce
4 ounces cream cheese, cubed
saute onion, celery and carrot in olive oil for 3-5 minutes. Add chili powder and cumin and cook on low to medium heat for 5 minutes. Add crushed tomatoes, tomato sauce, and chicken and cook until seasonings are incorporated. Add chicken, beans, corn, broth, celery salt and cilantro. Cook for 30 minutes on low. Stir often. Add the wing sauce and cook for a good 20 minutes. Add in the cubed cream cheese. Stir until blended and heated through. Feel free to add more chicken broth if mixture is too thick. Add salt and pepper to taste. Make a day ahead if you want it to be extra good!
