A Southern Sunday Post…The Best Book I've Ever Read!


So, I was excited about leaving town and getting away to our beach place for a few days after Christmas and I told my mother I had nothing to read. She and I always swap books back and forth and I was actually searching for something that I had my eye on when she said, "Have you read Shirley's book?" If I'm being honest then I must tell you that because I know Shirley and she is such a dear friend of my mom's I truly didn't think of this book as something that would truly captivate me! Boy, was I wrong! When I tell you that I have not put this book down since Friday night…I am not exaggerating in the least! It is by far the most wonderful thing I have read in a VERY long time! And I am ashamed to say that just because I know the author…I didn't take it as seriously as I should have! Shirley is a fabulous writer and should be writing a series….I cannot remember reading a book that totally captured my heart like this one has  since reading 'The Hiding Place' by Corrie Ten Boom.

I will back up just a bit…mainly to tell you why my heart is so captured! Last Sunday in Sunday School we sat as usual in class but also had Miller, Holly and Brad with us. Wales Goebel is teaching our class, which that in and of itself is the best thing ever! However, that day it was if the Lord Himself was speaking through Wales…we sat on the edges of our seats as he challenged all of us of any age to stand in the gap…we have so many gaps in our society these days and he covered all of them beautifully! My heart was truly touched and I could tell my kid's were touched as well. They talked about that Sunday School class for days and still refer to it. I even remember thinking, "What if this lesson is meant for one of my children?" When in reality, I knew in my heart that after hearing all that Wales taught us it was my heart that needed touching and I was the one that needed to step up to the plate in my every day life and no, maybe I wasn't the one to fill the shoes of Dr. Billy Graham but I could indeed do what I was intended to do in the lives of my children and grandchildren! 
It is so very important to remember exactly why Christ died for us and exactly why we are here on earth! It is for the eternal things….the temporary things are just so…temporary!
Then on Christmas Day Night…I got VERY sick…I am not elaborating on that because I don't want that to be the focus but let's just say it got my attention! I remember in some fever related stupor praying to God and saying if you will use this in my life I will be what You want me to be! I can honestly say that I hope I never forget that feeling or that prayer. Then, many hours later…I began to muster up the energy to live and begin thinking ahead about our trip to the beach. That is when I asked my mom for a book and she loaned me her copy of Shirley's biography of Hannah Mitchell's life…my life will never be the same after reading this incredible story of one woman's desire to serve the Lord in whatever capacity she could.
If you want to be totally captivated and motivated all at the same time then you need to read this book! 
I love Shirley and love her family! She is the real deal and I am one grateful woman to be able to call her my friend! I can also tell you that she can sing a mean rendition of Patsy Cline's "I Go Walkin' After Midnight" (you can see the legendary Patsy Cline HERE!) My sweet Holly will testify to this because she saw it and heard it for herself! She said Shirley sounded exactly like Patsy!
No matter if she can sing or notshe can most definitely write and this book is the most energizing book I've ever read! I'm so grateful that she has taken the time to share the story of this incredible woman, Hannah Mitchell. A missionary in her own rite…this is a testimony to God's faithfulness if I've ever seen one. I am blessed beyond measure by Shirley's book. I hope and pray that each and every one of you have a blessed New Year and I pray that the year 2013 leads us to where God would have us. That we would each fill the "gaps" that are in desperate need to be filled. That we would take the time to remember all that God has done for us and be grateful.

A Southern Sunday Post…"Twas The Night Before Christmas"


Last year my mother asked me to re-write Twas The Night Before Christmas so that she and her friends could use it for their Discovery Club children to teach them about the real meaning of Christmas…thought you might like to read it again 



TWAS THE NIGHT BEFORE CHRISTMAS

TWAS THE NIGHT BEFORE CHRISTMAS AND ALL THROUGH THE LAND,
NOTHING WAS STIRRING.... NOT EVEN THE SAND!
THE STALLS WERE ALL SWEPT AND THE ROPES HUNG WITH CARE,
BUT NONE COULD IMAGINE WHAT WOULD SOON HAPPEN THERE.

THE CAMELS WERE NESTLED ALL SNUG IN THE HAY,
WHILE A STAR SHONE SO BRIGHT, IT LOOKED LIKE THE DAY!

THE INNKEEPER'S WIFE GOT READY FOR BED , AND HE WAS SO GLAD
TO JUST REST HIS HEAD

WHEN A KNOCK AT THEIR DOOR CAUSED SUCH A CLATTER,
THEY LEAPT FROM THEIR LOFT TO SEE WHAT WAS
THE MATTER!

THEY OPENED THE INN DOOR AND PEERED OUT TO THE STABLE;
AND SHOOK THEIR HEADS SADLY AND SAID,
"WE ARE NOT ABLE!"

THE MOON SEEMED SO BRIGHT THEY TOOK ANOTHER GLANCE,
TO SEE WHAT IT WAS THAT BROUGHT THEM HERE BY CHANCE!

BUT WHAT TO THEIR WONDERING EYES DID THEY SEE,
JUST A MAN AND HIS WIFE.... SOON TO BE THREE!!

ON A DONKEY MARY RODE AND TO ME SHE DID SMILE,
AS JOSEPH, HER HUSBAND ASKED TO STAY AWHILE.

I SHOOK MY HEAD SADLY AND SAID "WE'VE NO ROOM IN THE INN"
THEY GAVE ME A NOD... AND IT HIT ME THEN!!!!!!

THE STABLE WAS CLEAN, I HAD WORKED TILL IT SHONE,
HOW COULD I KNOW THIS WOULD BE HIS FIRST THRONE?

THE SKY THAT WAS LIT BY THE MOON SO I THOUGHT,
WAS BETHLEHEM'S STAR... AND THE WISE MEN IT BROUGHT!

THEY KNELT AND THEY BOWED AND THEIR VOICES DID SING,
AS THE GIFTS THEY HAD BROUGHT WERE BESTOWED
ON THE KING!!!!

THE SHEPHERDS ARRIVED AND THE ANGELS AS WELL,
"GLORY TO GOD IN THE HIGHEST" WAS THE SONG THEY DID TELL!

HE WAS SWADDLED IN CLOTHS AND THEIR HEARTS LEPT WITH JOY
AND THEY LEFT TO TELL OTHERS ABOUT THIS SPECIAL BOY!

A BABE IN A MANGER SURLEY DOESN'T SEEM RIGHT....
BUT HE HAD GIVEN US CHRISTMAS ON A COLD WINTER'S NIGHT!!!!



I know this is a repeat from last week but I couldn't think of anything better to post about this close to Christmas…after all, this is what Christmas is really all about! I hope everyone is enjoying it to the fullest and experiencing the true joy that only comes from Christ our Savior!

And Mary Rode In On This? Yes, This Is Really My Southern Sunday Post!


My dear friend Sharon actually saw this yesterday at a gas station in Daphne, Alabama! Go figure!
Can you even believe it? And can you even imagine a very pregnant Mary riding on the back of a donkey? Scholars may differ in their opinions of what she actually rode on to that lowly stable but we all know it wasn't a plush limousine or carriage or especially a red pick up truck! It was an animal at best…and probably a donkey…
Only to give us the greatest gift known to man…the gift of a Savior!



Luke 2:1-14 gives us the greatest account of the birth of Jesus on that Christmas night that has forever changed the course of history...



What a wonderful sermon we heard today in church and what a very special and very inspiring Sunday School lesson from Wales Goebel! I know that I will never be the same after hearing it! It was a wonderful, blessed Sunday…then out to lunch with a dear friend and then a fun, lively dinner with Mitch, Britney, Layton, Miller and Sarah! We ate a lot and laughed a lot! 
The two go hand in hand in our house!
We had one of my favorite dishes…I was sort of testing it for this weekend's party…I just can't decide! But here's the recipe incase you want to try it!

Roasted Red Pepper and Chicken Lasagna




4 C shredded, cooked chicken
2 containers Chive and Onion Cream Cheese, softened
1 10oz. package frozen, chopped spinach, thawed and drained well
1 t seasoned pepper
3/4 t garlic salt
9 Oven Ready Lasagna Noodles ( the no boil kind!)
1 12 oz. jar roasted red peppers, drained
1 16oz. jar Alfredo Sauce with Aged Parmesan Cheese
1 3 oz. package shredded parmesan cheese
1/2 crushed red pepper flakes
3 C Shredded Italian 3 cheese blend
Stir together the first 5 ingredients in a large bowl until well blended. In a food processor, puree the roasted red peppers and add to the Alfredo sauce, the 3 oz. parmesan cheese and the crushed red pepper flakes. 
In a greased 11 x 7 deep casserole dish put a small amount of the roasted red bell pepper and cheese sauce on the bottom. Begin layering with the 1/3 noodles, 1/3 chicken and spinach mixture, 1/3 Italian cheese blend and 1/3 sauce. Repeat twice ending with the shredded cheese. Cover with foil. Bake at 350 for 50 minutes. Uncover and bake 10-15 more minutes. Let sit for 5 minutes before slicing.


And then, last but not least…Peppermint Ice Cream with my new Chocolate Sauce! YUM!!!



For the sauce:
12 oz. bag chocolate chips
1 C half and half
1 T butter
1 t vanilla
Put all ingredients together over low heat and whisk till blended and melted and thickened. Spoon over desired ice cream!

I've Been Watching You!

"I've been watching you, dad ain't that true…I wanna be like you!" Rodney Atkins certainly hit a home run with this song! We've all hummed along with it and probably felt a little pang of guilt as we listened to his lyrics...


Scary….Scary….Scary!!!
The traits our children pick up on without us even realizing it! Some are good…most are good! But then, those bad ones surface and it makes me feel terrible…for Jim! ( just kidding! )
For both of us! And for our children! I want and need to be careful even with grown children about how I act, what I say, what I do and especially, how I love my husband! 
I'm preaching to the choir right now, trust me!

A Southern Sunday Post…."THESE ARE MY PEOPLE!"



I can't think of any better words to describe what I'm feeling at this moment! I truly can't! I would love for you to listen to  Rodney Atkins singing this song but I doubt you will…so, I've put the chorus here so you might just get a taste of what I'm feeling right now!


These are my people
This is where I come from

Happy 90th Birthday, Joe! We love you very much!


I'm so grateful for my Aunt Jayne and Robert opening up their beautiful home for this party!


And there was NOTHING like getting to be with our cousins Kimberly and Melanie again after way too many years! I have a feeling this will be happening again pretty soon! Just look at Layton's smile! She loved being a part of a big, happy family!


What an incredible example of a loving marriage they have given to us!!!



After a fun filled, family weekend in Memphis…celebrating my grandfather's 90th birthday….I've come to know one thing that is for certain…we NEED our people! They are the backbone that holds us up strong! They are the ones we can count on when the going gets tough! And by golly, they are the ones we can celebrate with when life is worth celebrating! I can't think of a better reason to celebrate than this occasion! My grandfather's 90th Birthday!


I sure hope to be able to see my own children enjoy this celebration when I turn 90 but hey, if not…we will celebrate in heaven! For now, we sure did enjoy being together for Joe's 90th birthday! We are already planning my grandmother's 90th celebration next year! It was so much fun to see each other after more years than I care to admit….it had been WAY overdue for this family reunion! Even Layton had the time of her life! 


However, I must admit it was nice to come home to some wonderful leftovers and not have to think about cooking after this eventful weekend! I made this dish Friday night and knew you would all want to see it and try it! I promise, it's incredible! The original recipe came from Pinterest but I did make a few changes….hope you like it!


It's Fajita Shrimp Pasta and I promise it was incredible!


 It was so easy to sautée the onions and the peppers…and garlic!


All I did was add the Mexican Seasoning!


 Then I sautéed the shrimp for just 2-3 minutes with some more seasoning!


 Next came the Enchilada Sauce!


 After cooking the veggies and the shrimp I simply set them aside while the pasta and the sauce cooked.


 Then, because we weren't ready to eat it right away it was easy enough to put in this casserole dish and set in the oven to bake while we continued on with our night…


 Loved using this Cotija cheese for the first time! 
So light and yummy!


It only baked until it was bubbly and then we sat down to a delicious dinner of Fajita Shrimp Pasta!
Enjoy!

Fajita Shrimp Pasta


13.25 oz box dry whole wheat linguine ( I used 3/4's of the box )
2 tsp extra-virgin olive oil
2 bell peppers, sliced thinly into strips (I used 1 yellow, 1 red )
1/2 large yellow onion, halved and sliced thinly into strips
2 1/2 Tbsp fajita seasoning, divided
1 1/2 lb raw shrimp, peeled & deveined ( I used 1 lb. of shrimp )
19 oz can enchilada sauce
4 oz reduced fat cream cheese
Crumbled Cotija Cheese
Directions:
Cook the pasta according to package instructions. Drain and set aside.
Meanwhile, heat olive oil in a large skillet or cast iron skillet until rippling. Add the peppers, onions, and 1 1/2 tablespoons of the fajita or Mexican Seasoning. Cook 8-10 minutes or until tender and onions are translucent and veggies are browned for that fajita effect! Remove to a bowl and set aside.  Add shrimp and remaining 1 tablespoon seasoning to skillet. Cook 3-4 minutes or until shrimp are no longer opaque. Remove shrimp to a bowl and set aside.
Add enchilada sauce and cream cheese to skillet and whisk well until cream cheese is melted and incorporated into sauce. Toss to incorporate and melt the cream cheese.
Add all ingredients ( including pasta ) and toss well. Place in a greased casserole dish and crumble the Cotija cheese on top. Bake at 350 for 20-30 minutes…may want to cover with foil so as not to dry out the pasta.
Yield: 7 servings (about 1 3/4 cups each).
Nutrition Information (per serving): 401 calories; 9.1 g. fat; 140 mg. cholesterol; 618 mg. sodium; 52.9 g. carbohydrate; 7.4 g. fiber; 28.7 g. protein
Result: Must make recipe! That’s right…get on it! Choose your favorite protein if shrimp isn’t it. You can prep your veggies ahead of time to make this a 20-minute meal. Husband-approved…dietitian-loved. This makes a lot of food…perfect for leftovers, entertaining guests, or lots of hungry mouths to feed. With all the protein and fiber, this is one filling meal packed with flavor…and only 400 calories. Enjoy!

We loved every single bite of it and are already looking forward to the leftovers after a long weekend in Memphis!
