Loving Pinterest And It's Recipes!

It's always nice to be home….no matter what! Even after a great vacation at the beach it's still great to be home!
And when I get home….I always want to eat a lot more healthy than I do at the beach or wherever we are on vacation…
This is where wonderful recipes from Pinterest come in!
Tonight, it was grilled Salmon, oven roasted broccoli and New Potatoes with light butter and light sour cream. 
( I had to have SOMETHING that would fill Miller up!)


To say this was divine is putting it lightly! We loved it! And it was easy and it was found on Pinterest!


The dill cucumber sauce that went with the Salmon was just as good and even Miller liked it this time!


And I have to admit I was eager to use my fresh dill in the sauce and show off one of my herb markers that Holly gave me for Mother's Day!


I hope you will check out these recipes and enjoy the use of Pinterest! It's really been fun for me and next time….I'm thinking of sharing my first experience at steaming an artichoke with you! If you promise you won't laugh! 


My mom did this for us when we lived in California so I've always grown up with it and loved them! Boy…I should've appreciated it much more than I did way back then! But give it a try! It's fun! As are most recipes if you have the time to do it!

The Sweetest Things Sunday...Memorial Day 2012

Happy Memorial Day!
I hope you are all enjoying a wonderful weekend celebrating our freedom's as Americans and remembering those that served in order for us to enjoy them!




The sweetest thing I could think of that reminded me of Memorial Day was my friend Sharon's Blueberry Cobbler! It is so easy and very yummy! Give it a try if you can!
It's one of those desserts you will be making for a long time!



4 C fresh blueberries 
1/4 C sugar
1 stick butter, softened
3/4 C sugar
1 C flour
1 t baking powder
1/2 t salt
1/2 C milk
grease 3 qt. casserole dish or 9 x 13...put in blueberries and sprinkle 1/4 C sugar over them. Mix rest of ingredients and pour over blueberries and spread evenly. ( I did 1 1/2 x this part of the recipe and it was the best yet!)
* In a 4 C glass measuring cup or bowl, add 1 C COLD water, 1 t cornstarch and 3/4 C sugar...heat in microwave on high for 2-3 minutes or until boiling. Carefully pour over all in pan.
Bake at 375 for 40-45 minutes...will look brown but it's suppose to!! 
Serve warm with homemade vanilla ice cream.


As much as I always treasured the old timey ice cream maker we received as a wedding gift many moons ago! I have gladly switched to my new Cuisinart up dated version!

Homemade Vanilla Ice Cream


This is a recipe from my mother in law and it's by far the best 
homemade vanilla ice cream you will ever taste!

3 C sugar
2 T flour
4 eggs
1 quart whole milk
3-4 T vanilla
2 small cartons heavy whipping cream

In a heavy saucepan or dutch oven combine sugar and flour. Add eggs and whisk well while adding the whole milk over medium heat stirring constantly. Do not boil! Continue stirring until thick and smooth with a wire whisk. This does take a bit of patience! When thickened, remove from heat and add the vanilla. Place in the refrigerator to cool-I do this the night before. When ready to make the ice cream….add the 2 cartons of whipping cream and stir until well blended. Then simply follow the directions on the desired ice cream freezer of choice and enjoy!!!

So glad Miller and Holden have been friends for so long!


And this group of guys…well, I'd pretty much lay my life down for you! So don't disappoint! When I listen to "We Laughed Until We Cried" I'm crying! Only because for so long this was my song for me, Jim and Miller! It took us forever to blessed by his birth…and now, he's on his senior trip! The song has taken on a whole new meaning but only because he is 18 and a graduated senior. I want him to be 3 years old, in my arms and hugging my neck!


I'm definitely listening to the song, "We Laughed Until We Cried" but I'm also most definitely "Crying Until I'm Laughing"! So glad for these pictures and the memories they bring back!!! I love all of you more than all the rice in China!!!
