Chicken Tetrazzini

This is the dish that I made for my oldest child's high school graduation lunch...I will never forget it! I was already going to post this recipe tonight...but then I saw a friend talking about how hard it's going to be soon because her child is leaving for college this fall....
It brought back alot of memories...mostly good!!!!


What alot of people don't realize is that food is associated with memories...whether you like them or not!!! Good, bad or indifferent you can't tell me that a certain smell, flavor, even a "seating arrangement" LOL!!! doesn't stir up old memories!
so here goes...my tried and true recipe for Chicken Tetrazzini...courtesy of Southern Living!
1/2 C light butter
1/2 medium onion, chopped
1/2 C all purpose flour
4 C whole milk ( I use 2 % )
1/2-3/4 C white wine
2 T chicken bouillon granules
1 t seasoned pepper
1 1/2 C parmesan cheese
4 C cooked, chopped chicken
12 ozs vermicelli, cooked
1 6 oz jar sliced mushrooms, drained
1 C soft breadcrumbs
2 T melted light butter

melt butter and saute onion until tender...about 3-5 minutes. Whisk in flour until smooth...gradually add milk and wine..cook, whisk and stir constantly until smooth and thickened...add bouillon granules and seasoned pepper and 1 C cheese. Cook until cheese and bouillon granules melt and are well blended. Remove from heat and add chicken, mushrooms and vermicelli. Stir well and place in greased 13 x 9 baking dish...bake for 20 minutes at 350...toss breadcrumbs with melted butter and sprinkle over casserole and bake for 20 more minutes or until bubbly! Enjoy!

Of course this dish is more enjoyable when shared with others!! Invite them over for that graduation luncheon...make a memory! You won't regret it! It will be a Great Memory...and that's very important as our lives are constantly changing and there isn't enough time in a day to let the people we are closest to   know just how very much we love them!!! But you can always share a meal with them and make them feel special!!
