Easy….Easy Like Sunday Evening….

I am always looking for easy and yet yummy dinners for just the two of us. Especially these days when life is getting more and more hectic. Today, we ate a big lunch after church and once Miller headed back to Auburn I didn't really feel like cooking.
So I did what I do best lately! 
I headed to google and Pinterest! Remember how good a Monte Cristo sandwich used to be? 
Well I do and I really wanted one!
 I found exactly what I needed to go with the turkey and bread we had bought at Publix earlier today! And this one is baked!
The new Asiago Cheese bread I found really helped!


I love that we can literally hit google and come up with anything! 
I enjoy searching cookbooks and researching recipes probably more so than normal but when I'm short of time and ingredients the shortcuts we have these days are a life saver!

Baked Turkey Monte Cristo Sandwiches

4 slices good, hearty bread 
shredded turkey and/or ham
sliced or shredded cheddar cheese
cranberry sauce
softened unsalted butter
2 large eggs
1/2 Cup whole milk
salt and pepper to taste
Raspberry preserves, warmed in microwave

Spread cranberry sauce on two slices of the bread. Top with the turkey and the cheese. Place other two pieces of bread on top. Whisk eggs and milk and season with salt and pepper in a dish wide enough to soak the sandwiches in. Carefully place the prepared sandwiches in the egg and milk mixture and let soak on each side for one minute. Place on a buttered cookie sheet. Bake at 400 degrees for 15 minutes.  Turn and cook for 7 more minutes. Let sit for 5 minutes before slicing. Serve with warmed raspberry preserves on the side.
