I loved our first 10 days of Paleo…then Easter weekend hit…then life hit…then it was time to grocery shop and start researching good recipes for this diet and start cooking up a storm! I was in a bad mood! I don't mind telling you! I thought I was excited about our Paleo Pizza…aka…Meatza! Then, I started thinking about the amount of bacon, eggs, steak, etc that we've been eating…and I flipped! I did! Luckily, I just flipped my cooking schedule from beef to turkey but I almost flipped my lid as well! Just ask Jim!
So, tonight I did make a version of Meatza! Just Asian style!
It really was delicious! Especially if you are a Thai fan and a pizza fan! This one is for you!
Here is my turkey "crust"!
Topped with the asian style pizza sauce.
Then the chicken is added.
And then the rest of the toppings….green onions...
Bean sprouts and shredded carrots...
A little bit of Mozzarella cheese...
And all of a sudden…it's ( sort of ) a Pizza!
With a side of Paleo Asian Slaw!
What the heck? Give it all a try! What do you have to loose? Maybe a few extra pounds? We shall see…of course Jim lost 5 1/2 lbs the first week and I lost ONE!!!!
I love him anyway! Hope you all have a great week! I'm including the recipe below!
Paleo Style Asian Pizza
Crust
2 lbs. ground turkey
Toppings
2 C shredded rotisserie chicken
3-4 green onions, diced
1/2 C shredded carrots
1/2 C bean sprouts
1-2 C shredded mozzarella cheese
Sauce Ingredients
3/4 C Hoisin Sauce
*3 T peanut butter
1 1/2 T organic honey
3 t red wine vinegar
2 t minced ginger
3 T toasted sesame oil
4 t Coconut Aminos
3 t Oriental Chili sauce
1 T fish sauce
3 T water
bring all ingredients to a slow boil and turn off.
Press ground turkey in a cookie sheet and bake at 375 degrees for 20 minutes. Carefully, pour off excess liquid and blot dry with paper towels. Toss chicken with 1/4 C sauce…pour rest of the sauce on top of the cooked turkey crust. Top with the chicken, 1/2 of the cheese, green onions, bean sprouts and carrots. Bake for 10 minutes at 350 degrees. Remove from oven and top with remaining cheese. Bake until cheese is melted. Slice into squares and serve. It was great with our Asian Slaw!
*I do not claim any of these recipes to be truly Paleo…I am simply reporting our trial and error experiences! I know that Peanut Butter is truly iffy on this diet…and yes, I used Jiffy! I caved at the last minute and knew I had to have a truly good sauce! You are welcome to experiment on your own! Let me know your thoughts and what you find to work the best for you!
