A 'Cowgirl Quiche' And 'A Book Thief' Kind Of Night!


 Yes, I am really combining this wonderful recipe with a movie review! Why not?
I mean….it's just been that kind of day. 
We attended a funeral for Brad's cousin and then came home and of course, I had to cook. 
It's the only way besides exercise that I know how to relieve stress.  My sweet friend Sharon made this phenomenal quiche for my 50th birthday party and I've been dying to share it with you! 
So here goes!
Cowgirl Quiche
(compliments of the pioneer woman!)
12 ozs sliced, fresh mushrooms, rinsed and patted dry
2 leeks
2 T butter
8 eggs
1 1/2 C heavy whipping cream
2 C grated swiss cheese
salt and pepper to taste
8 slices prosciutto, diced
one deep dish pie shell,  uncooked

Preheat oven to 400 degrees. Place mushrooms on a greased baking sheet and roast for 15-20 minutes. Set mushrooms aside. Cut off most of green stems and slice the bottom of the white part off of the leeks. Cut in half lengthwise and soak in cold water to get rid of all dirt. Rinse again and drain on paper towels. Dice thinly and sauté in the butter. Set aside. In a large mixing bowl whisk the eggs and the cream together. Add in salt and pepper, mushrooms, leeks, prosciutto and swiss cheese. Mixture will be thick. Pour into unbaked pie shell. Cover very lightly with foil and bake for 40-45 minutes. Uncover and bake another 10 minutes or so or until set. Allow to sit for 10-15 minutes before slicing.


As you can see…I decided to double this recipe to be able to freeze one or send one! I was hoping to send one home with Holly and Brad if they had been able to stop by after the funeral. But bless their hearts…they drove in and had to drive right back out. 
What a day this has been. 
My heart breaks for Brad's Aunt and Uncle and for Stephen's sister and the extended family members. Today was a sobering reminder of how fleeting this life can be. 
It is a reminder to all of us to cherish those around us. Which is why I guess I felt led to watch "The Book Thief" tonight. Set in Nazi, Germany…this story is another account of the holocaust….with a slight twist. If there ever is a twist with any holocaust stories. This one is definitely worth watching. 


This was one verse that brought me comfort when I reflected on today as well as the movie…we definitely face so many trials on this earth but our Heavenly Father is waiting to console us and give us the strength we need to face each day.
