A Southern Sunday Post…"Are You Kidding Me?"





Really? 
Really, Kevin? ….I am not OLD enough to be a grandparent! And yet…I SOOOO am!


In fact, I'm going to Grandparent's Day tomorrow! 
Yes…I AM! Yes, I AM!! 
Maybe if I repeat it enough times it will finally sink in!


(And the day you see this sign at my house is the day you know that I have officially lost it!!)


But I haven't lost it when I know that making time to spend with Layton is one of the greatest joys and one of the biggest blessings that could ever happen to us!


Isn't he just the cutest thing you've ever seen in your life??? Oh..wait, I mean isn't SHE the cutest thing you've ever seen in your life?


They are both pretty darn cute….


And I'm happy to tell you that I love them both more than all the rice in China!



And this family of ours makes me really happy! 
I guess you could say, I am one proud 'Grandma'!



So I will go to Grandparent's Day tomorrow with my head held high! As long as Jim is with me…


As long as we can go through this together, knowing that we are not old…we are just Grandparents!



And being Grandparent's is truly grand…trust me on this one! It is something to be proud of!
Just like Montgomery Gentry's song….
Especially when Layton is your grandchild! I for one could not be any more proud of her than I am!

And, just because I'm in a "Thanksgiving Kind A Mood" I wish you would try this recipe for Turkey in a Slow Cooker! It was truly delicious!! I will be making this often…

Turkey Breast in a Slow Cooker
( with white wine gravy!)

  • 1 cup low-sodium chicken broth 
  • 1/2 cup white wine 
  • 2 tablespoons lemon juice
  • cloves garlic, roughly chopped
  • 1/2 teaspoon dried thyme
  • large onion, quartered 
  • ribs celery, each cut into 4 pieces 
  • large carrot, cut into 1-inch pieces
  • 5 1/2-lb. bone-in turkey breast, skin removed
  • 2 tablespoons unsalted butter, melted
  • Salt to taste
  • 3 T Cornstarch

Preparation

  1. 1. Stir broth, wine, lemon juice, garlic and thyme in slow cooker. Add vegetables. Rinse turkey in cold water; pat dry. Brush turkey with some of the butter; sprinkle with salt. Place turkey in cooker, meaty side up; drizzle with any remaining butter. Cover and cook on low until a thermometer inserted into center of breast reads 170ºF, 4 to 5 hours. Transfer to a cutting board and tent with foil. Let rest 15 minutes.
  2. 2. Strain cooking liquid into a pan. Remove 1/4 cup of liquid; whisk with cornstarch until smooth. Stir cornstarch mixture into pan. Bring to a boil, whisking; cook until thickened, 2 to 3 minutes. Season with salt. Slice turkey; serve with gravy.
