Hilton Head Is Calling Me Home!





I can't believe it's that time again…it's already been a year! Wow! Time is flying right past me at the speed of light! Not sure I can keep up much anymore! I sat down tonight to do a post for Vintage Mulberry because frankly sometimes it's just easier to talk about decorators, designers, builders, etc…anything but me! This is a tough one! But I will work through it! This time exactly a year ago we were headed to Hilton Head Island for Miller's senior trip! I was so thrilled that he chose it and we had the time of our lives! Because we loved it so much, I asked for this trip for our 30th Anniversary and truthfully I'm a little concerned! I hope it will be all that it was last year and even more! Therefore….there must be food involved, right? It makes it easy for me because then there is something real that I can do to get ready for it and gear myself up to be the host and hostess to children that range from the mere age of 6 to the ripe young age of 30! ( If only I was still 30!) Oh, and then there is me and Jim! We won't go there with ages! But only one of us is 50 yet!:) So, before I share too much of what is going on in my heart I will simply say this….when you go somewhere like this for a week with so many different ages, personalities and likes and dislikes food seems to make it all better! So, I started planning the menu and thought about asking everyone's opinion…but then reality hit and I decided this trip was in fact not a democracy but definitely a dictatorship!


 That's why I always loved my mother being our tour guide on our family vacations! She had it planned out to the inth degree and we all went along with it and we all loved it! All of that to say, what do you like to make for lunch when you are at the beach? When we are at our beach house in Destin we eat at the Beach Club so I don't have to worry about it. But when we are in Hilton Head we are our own Beach Club…and that truly makes me so happy! It makes it so much more relaxing! We do what we want to do when we want to do it! We ride bikes on the beach…we sit in the house, we dive for sand dollars…well, I don't because of my ears but I help hold them! And we simply enjoy being a family! So without further adieu….here are a few things I'm considering for our lunches in Hilton Head! The first one is because Britney and I love tomatoes and cucumbers so much!

Sarah Foster's Southern Kitchen

Cucumber and Heirloom Tomato Salad

6 small Kirby cucumbers sliced into 1/4" slices
4 Heirloom tomatoes, cored and cut into a mix of wedges and slices
Handful of fresh basil, torn into pieces
1/4 C white vinegar
1/4 C avocado oil or extra virgin olive oil
juice of 1 lime
1 teaspoon sugar
Sea salt and fresh pepper to taste
Combine the cucumbers and tomatoes and basil together. Whisk the other ingredients and pour over all. Let sit  for about 3-4 hours so flavors can marry. Serve at room temp. 

Corn Salad
( this is the best corn salad I've ever tasted! I promise! it goes great with Pork Tenderloin or just with other salads!)
The Magic CookBook's Corn Salad
2 cans Green Giant Shoe Peg corn, drained well 
1 bell pepper, seeded and chopped ( optional)
1/2 purple onion chopped or grated finely
1 cucumber, peeled and seeded and chopped
1/2 C sour cream ( I used light)
4 T mayo ( I used light)
2 T white vinegar
1/2 t celery seed
1/2 t dry mustard
1/2 t black pepper
2 t salt…or to taste
1 box cherry tomatoes, halved
Mix all vegetable except tomatoes. Combine sour cream, mayo, vinegar and seasonings. Pour over vegetables. Cover and refrigerate over night. Right before serving add halved cherry tomatoes. This is truly divine!



And yes, there will be similar Pimento Cheese from our last Sennod Trunk Show at the shop! Holly is bringing her own version of the best pimento cheese ever!
Pimento Cheese Spread

1 lb. New York Sharp Cheddar Cheese, grated
1 clove garlic, minced
1 small jar pimentos, drained
1 can Rotel tomatoes and green chilies, drained well
1 C good, quality mayonnaise
1 round of Hawaiian Bread, scooped out
Toast Bread round for about 10-15 minutes. Add mixture that has been well combined of cheese, garlic, pimentos, rotel tomatoes, and mayo. Serve with wheat thins! So yummy!

Ok, I hope this wasn't too boring! These are just a few of the salads we will have on hand…I also plan to have a Honey Baked Turkey for those guys that have to have a real sandwich! And yes, we have some really great dinners planned to cook in as well! I will share those recipes as well if I feel they are "worthy"! I know that this year I'm making it truly easy on myself so these meals will be planned with feeding lots of people in mind..so 'quantity' and 'quality' will all be in play there! But I'm also looking very forward to those nights we eat out and go to Harbour Town and hear Greg sing and get ice cream from the best ice cream stand EVER! Yes, one that will even make you get a spoon to stay on your nose! It's THAT good!



Hope these lunch ideas appealed to you! If you have some other wonderful ideas I would love to know them! I usually make my grilled chicken pasta salad or my favorite pasta salad of all time and you can see that recipe HERE. I still might make them depending on time! And now…I've discovered that Layton loves Egg Salad! My all time favorite but not so for the rest of my family! Maybe Layton and I will have to escape for an egg salad sandwich somewhere! No matter…I'm praying our family enjoys this time together!
