Happy Saturday Everyone!


Although this was supposed to be posted last Saturday...I thought you might still enjoy the pumpkin muffin recipe! I have another FABULOUS muffin/bread recipe for tomorrow though...so stay tuned!

When my kids were young they looked so forward to the smell of these delicious pumpkin muffins that I would make as soon as the weather allowed!! It signaled the beginning of fall for our family.

Of course this is an expected recipe this time of year but I certainly do not ever get tired of it and I always look forward to taking a batch to my grown and married children! I'm so glad Layton likes them as well!! If you have anyone you need to do something special for... i would definitely make these muffins!
I was so glad to hear that  my precious daughter Holly just made these for her friends that came to visit her right about... NOW!!...I bet they are arriving in New Orleans at this very minute!! I'm so glad they are there! They will be a bright spot in Holly and Brad's weekend and I can only imagine how she will brighten their hearts with her wonderful stories and heartfelt experiences!! She can make anyone have the best day ever... NO MATTER WHAT HAS HAPPENED!!!  I hope they have the best time ever experiencing New Orleans the REAL way!!! with someone that lives there! I can't wait to go back!!! I'm so glad they are there and have so much to do!!! There is NEVER a dull moment, I can assure you!!!! I'm just dying to get back to hear the Neville Brothers that we passed up last time!! I could just kick myself for not going now that we play them every day at the shop!! I am posting their link at the bottom of this post because they are so much fun and so good! ( of course, Holly had never heard of them before....which made me feel really old!! )

Here is the recipe for Pumpkin-Chocolate Chip Muffins....leave out the chocolate if you so desire...I always thought I would too....until I tasted it!

Chocolate Chip Pumpkin Muffins

1 2/3 C flour
1 C sugar
1 T pumpkin pie spice
1 t baking soda
1/4 t baking powder
1/4 t salt
2 eggs, lightly beaten
1 C canned pumpkin
1 stick butter, melted
1 C chocolate chips

mix dry ingredients together....beat eggs, add melted butter and pumpkin....stir well. I never do this in a mixer...I simply stir it and it's fine! add chocolate chips at the end...stirring in to mixture. Bake at 350 for 20 minutes or until done. Makes 12-15 muffins depending on size.


I promise these are incredible!!!!!
