Some Nutter Butter Love!

Every now and then I have this incredible craving for peanut butter! When that happens...there isn't really anything you can do about it except make something incredibly delectable and decadent! And then...regret like crazy that you did....and resolve to work it off and do better the next time it hits!
Well...this time...my urge for peanut butter simply took shape so to speak in the form of Peanut Butter Banana Muffins and yes...they were incredible but not life (or figure) threatening! Give me Sally's Sausage Dip any day!!

What IS life threatening to me is a tight schedule! So....I needed peanut butter...Miller needed an easy breakfast...and we had RIPE bananas!!!!

Need I say more?

                                 Peanut Butter Banana Muffins

Directions:

  1. 1
Spray muffin tin with nonstick spray and preheat oven to 375°F.
  2. 2
Combine eggs, honey, oil, water, bananas, vanilla and peanut butter in a large bowl and mix well with a hand mixer.
  3. 3
Combine flour, baking powder, baking soda and salt in a medium bowl. Fold dry ingredients into wet ingredients and stir 20 times.
  4. 4
Spoon batter evenly into muffin tin. Bake 20-25 minutes, until toothpick inserted comes out dry
*I had enough batter for 12 muffins and 1 small loaf of bread that I froze for a later date!

Trust me....these are divine hot out of the oven or heated in the microwave the next morning!!! Enjoy!!!
