I knew I shouldn't have ever "boxed" myself into a hole with 'The Sweetest Thing's Sunday' posts…don't get me wrong…I love doing them! It's just been quite difficult to always think of something sweet to (say) write about or give a recipe for! I've thought about changing it up to 'The Savoriest Thing's Sunday'…but nothing ever felt right! Therefore, as of October 7th, 2012…It is officially
'A Southern Sunday'!
I mean, seriously, that title could cover an entire range of topics! Which is exactly what I need since I never know if I'm feeling sweet or savory anyway! Sometimes I just want to talk about what's on my heart..you know, like last week's blog post! You just never know what is going to pop into this head lately! I feel completely free to do that on my "other" blog…but not here because I put pressures on myself that should never have been there! So, here's to the new…."me"? The new, the better…or is it just that i'm being real…the real me! ( there isn't a better me…it's just time to be real!)
The Southern Me!
Today, we are talking Southern Fried Corn!!! Yep, you heard
me….Fried Corn!
Who does that anymore, you ask! Well, that would be ME!!! And I bet you would love it if you could just taste it!

I've loved this cookbook by Sarah Foster for quite a while now and this was my second cookbook that I had actually bought from her at our local farmer's market one Saturday. So naturally, today when I was planning out our meals for the week since I'm working every day and then we are leaving for Atlanta for a conference for Jim's job…I thought of Sarah and her 'Southern Kitchen'! I quickly reached for her cookbook and sought her advice!
Yes, I cut off the corn from the cob and scraped it like any good Southern gal would do!
My mom used to tell me how much I needed to scrape it to get all of the milk, etc…out of it! So this time, I actually did it!
She was right! Just look at this! It's so simple and yet so wonderful! And what a wonderful addition to my roast in the crock pot with carrots and potatoes! Thankfully, Mitch and Britney and Layton have agreed to come to dinner tomorrow night…otherwise we would be eating this all week! Now, Jim can just take me out all of the other nights until we leave for Atlanta….looking very forward to this weekend, though! Miller is an usher in his dear friend and Bible Study leader's wedding! Maybe I can finally see some of those precious boys who left us for the "Other Side" and went to Tuscaloosa! I haven't seen them in about 2 months! I'm definitely feeling withdrawals here! I miss this close knit group of boys! I'm praying they stick together! No matter what!

Southern Fried Corn
6-8 ears, white corn, cleaned and scraped! and then scraped again!
1/2 stick unsalted butter
1/2 T sugar
sea salt and fresh pepper to taste
1/4 C water
1/3 C ( or a SPLASH) of half and half
ok, here's how it goes…shuck your corn…yes, shuck it and then peel away those pesky strings!!! Then, place in a deep skillet and cut it off of the cob! Be careful! Then, go back and scrape it until there isn't anything left! Let the "milk" fall into the skillet!
When you have finished that…put it on medium high heat and stir it around…season with the sea salt and pepper….add the sugar and the 1/4 C water…bring to a low simmer. After about 5 minutes add a splash of half and half…maybe a 1/4 C or if you don't care…1/3 Cup! let simmer until liquid boils out some…maybe another 5 minutes. Taste and see! Add whatever else you feel is needed!
ENJOY!!
I sure wish a splash of this and a splash of that was all that we needed to make us all feel seasoned just right!
I'm so very proud of my friends that I know are going through real troubles and feel like it won't ever get better!
I promise it will! I've Been There! I hope I don't have to go back!

It is so funny, Carolyn, that people who are not from the South simply do not understand some of our traditions, like this recipe and grits. I love love love this concept...just think of all it encompasses? Wonderful !!

ReplyDeleteLove this post! My father was born and raised in New Orleans. My cousins.. Paula, Pam, Patty, and Penny .. I'm not kidding :) still reside there and cook very traditionally. Grits, corn, love it all. This sounds delicious!
