Easy Chicken Recipes for Young Moms!

OVEN BAR-B-QED CHICKEN

6-8 boneless chicken breasts, cleaned and rinsed
6 T catsup
3-4 T white vinegar
1-2 T lemon juice
3 T worchestershire sauce
1/2 C water
1/2 t red pepper
4 T melted light butter
4 T sugar
1 t salt
2 t dry mustard
1 1/2 - 2 t chili powder
tobasco sauce to taste....if desired....garlic powder to taste!

place chicken breasts in a covered, greased casserole dish: mix everything else and wisk well! Pour over chicken and cover tightly with lid or foil. Bake, covered at 350 for 1 1/2 to 2 hours at least! Serve over white or Saffron Yellow Rice! ( the yellow rice is our favorite!) talk about making your house smell good! This has been a favorite of mine and Sharon Gilbert's since our first children were babies!!! And we still make it on a regular basis today!!! It doesn't get any better! Just adjust the spicy-ness to your taste!

POPPY SEED CHICKEN

5 chicken breasts, cooked and shredded or chopped, seasoned with salt and pepper
1 can Cream of Chicken Soup ( I use light for us and regular for company!)
8 oz sour cream
5-6 T melted light butter
1 1/2 C Ritz crackers, rolled into fine crumbs
2 T poppy seeds

mix soup and sour cream together and pour over chicken that is placed in a greased 7 x 11 casserole dish. Sprinkle chicken with a little bit of salt and more of pepper...
mix cracker crumbs with butter and then 2 T poppy seeds.....spread over chicken evenly and bake at 350 for 30-40 minutes or until bubbly! again...serve with white or yellow rice!

TWO MARINADES FOR CHICKEN!

these are both excellent in and of themselves...or I've even grilled them ahead...frozen them, brought them out later and used them in salads, on sandwiches, paninis, etc.....can be added to pasta dishes or whatever the need may be!

White Bar B Q Sauce for Grilled Chicken
6- 8 T mayo
2 T sugar
1 T salt
1 T pepper
3 T lemon juice
3 T white vinegar
mix well and marinate boneless skinless chicken breasts for atleast 6 hours... ( about 8 chicken breasts to a recipe)
if you serve on buns as sandwiches, or if you make my Pork Tenderloin Recipe that I posted a while back...this is the BEST sauce to serve with it!! I promise!

THE BEST WHITE SAUCE TO SERVE ON THE SIDE!

2/3 C mayo
1/3 C apple cider vinegar
1 t salt
1 t pepper
heat in saucepan over LOW heat....serve barely warm!

SHARON'S GREEK MARINADE

1/4 C Olive Oil
1/4 C lemon juice
3 t Cavender's seasoning! ( I use at least!!!! 2 T )
1 t worshtershire sauce
mix well, pour over 6-8 small boneless, skinless chicken breasts and marinate for atleast 8 hours! Grill, and enjoy!
