Finally!!!

Several months ago I was "chomping at the bit" to be able to say what was really bothering me...to tell all of our secrets...to tell why I was so sad or so frustrated....now that its finally here....I'm not really sure just what I feel yet! I know it sounds crazy, but...at the same time...when I walked in from work yesterday to see Holly and Brad "plopped" in front of the fire place, feet up, relaxing so it seemed...my mother's intuition took over. I quickly ran to the bathroom for a moment alone! I came back in the kitchen, pretended to do "something"..not even sure what it was...began washing my hands and thats when even my truly deaf ears heard Brad say, "Carolyn, we have something to tell you!" For a moment I actually thought of running back out the door! Then I just didn't say ANYTHING!!! I was frozen!!! I peered around the kitchen cabinets to see Holly's sweet face turned directly to me...not crying...just blank...and Brad in his chair...thats all I remember...I tried to tell them not to tell me until Jim got home! In fact, I admit... i kept waiting for them to jump up and say " We Got It!" but they didnt.... You see...we've prayed about this moment since last July!! We've known Brad had a huge chance at getting the store in Southside...I've driven the drive 1000 times!! I've circled the place alone trying to decide if "I" thought it was acceptable...did we really want it for them? Was is too dangerous? Was it too stressful for a young guy? Jim and I have sat in the parking lot and prayed over it numerous nights after leaving Bottega or Surin or wherever!!! Whenever we felt led....we were there! We really thought God was going to put Brad and Holly in this new store! This new concept of a store...not one like it here!!! Brad and Holly are perfect for it!!! A perfect fit!!! in "our" eyes!!!! I've saved all of the newspaper articles to be framed once Brad was there to put in his office!!! WOW!!! And....when we realized the time was up for Brad to be told after his interview...which went EXTREMELY well by the way...we all began to fret! We were all on pins and needles, I will admit!!! He should've heard a week ago!!!We all began to get ansy and angry! I prayed that they wouldn't get bad news on Holly's birthday! Well....they did!!! And it was hard!! I'm not going to lie!!! But I let them tell me...all by myself! I felt a peace like i've only felt a few times in my life! I didn't cry....Holly didn't cry...Brad didn't cry!!! We all discussed the reasons why?? The what if's and the fact that God truly has their best interest in mind!! We may not know the reasons why for a long time.... WE might never know them at all!!! Which is why I've gone back to re-read alot of my own posts in this blog!!! its time to put my money where my mouth is so to speak!!! Not for one minute have I doubted God's faithfulness or His Goodness!!! Now..don't get me wrong!!! I've doubted ME!!!! Very much so!!! I Cried!!! and they never knew it!!! and you know what? My eyes weren't even swollen!!! I truly laughed when I looked at myself in the mirror because I knew God had done that for me!!! I was able to be sad and cry to God by myself!!! They didn't need to see it or know it!!! I'm here to help them! to guide them....to support them!!!! I didn't cry in front of anyone until this afternoon as Holly sat by the fire (Brad went back to Jackson this morning for one more week) and I began to tell her what I didn't want to admit....I let myself finally give in to the fact that I want them here!!! I want my life back with them and I want them here to be with all of us!! I want her to teach again at Briarwood Christian School because she was so good! Everyone loved her and I just want my little, simple, Briarwood life to go on because I didn't grow up with that all of my life!! I LONGED for it!!! But....Briarwood is blessed with so many wonderful teachers that I finally verbalized to her what God had already been putting on my heart!!! " I think God may want to use you in other schools, or other areas as opposed to Briarwood right now!" of course, I began to cry! Why is it so hard to tell others that God has finally broken your will? Its still hard to write this because its everything on my heart and I don't want anyone to feel sorry for me or Holly or Brad or Jim or anyone!!!
We are blessed beyond measure!!! Its just always hard to watch your children be disappointed...especially when they've strived so hard for it...done everything above and beyond the call of duty! And...in your own heart you know they are more than capable and you feel like going to Truett or Dan and saying "What are you thinking?" in fact...I asked Brad this morning if I could call his supervisor and inform him that this was in fact a horribly wrong decision and he said, No....that would be embarassing!!!! Of course it would!!!
In fact...its embarassing to even admit that our hearts are downcast! That it put a bit of a damper on Holly's birthday!!! That we are very sad!!! But you know...it did! We are!!! All at the same time...experiencing the Peace that only Christ can give!!! Joy in the midst of circumstances!!!
I was able to finally compose myself and tell Holly that Jim and I wouldn't trade this time that she and Brad have spent in Jackson for ANYTHING!!! We have watched them both mature as adults and grow closer as a married couple...far more than if they'd been in Birmingham this whole time!!! Its definitely been for their good...and ours...even if we've had to let go!!! Its been hard on Miller because he does depend on Holly alot....most people wouldn't understand it and I don't really care! I'm just glad ( and extremely blessed!) that our children are ALL close! I do not take that lightly!!! It is a gift from God that I will always be thankful for! ....
So...where do we go from here??? Well...they move in a week....they don't know of any good apartments! ( Chick fil a puts you up...furnishes everything...stores your stuff!!! its just GRAND!!!) ha ha!! You are just in charge of hiding the "furry" pillows....the tacky paintings...oh wait.... I was about to be thankful! I could honestly use everyone's prayers!!! I'm truly fine!!! Right now I'm just trying to convince Holly that she and Brad need to investigate Anniston as opposed to taking whatever they see first on the Internet!!! They had to move twice in Jackson because that was never checked out in the first place!!! Its been hard on the parents...let me tell you!!!!
I'm very thankful for all that God has allowed us to experience! I'm glad that I'm smiling as I write this and that I'm looking forward to my house being empty! Go figure??? I long for them to be back....then I savor my alone time!! Which is what I'm doing at this very moment!! I've even "sacrificed" a basketball game to be able to sit here and write about it!!! God is good!!! All the time!!! All the time... God is good!!!! thats all I need to know...really!!!!
I am so very amazed that God has shown me His love through all of this! Not that ANY of this is bad!! Its just been a real learning process for our family and an extremely hard Trusting process for me!!! and I speak for Jim as well!!!! Our favorite verses are these....
Jeremiah 29:11-13 " For I know the plans I have for you, declares the Lord. Plans to prosper you and not to harm you; plans to give you a hope and a future. Then you will call to Me and I will listen to you. You will seek Me with and find Me when you seek Me with all your heart!"
Lamentations 3:21-26" Yet this I call to mind and therefore I have hope; Because of the Lord's great love we are not consumed! For His compassions never fail! They are new every morning; Great is Your faithfulness! I say to myself, "the Lord is my portion; therefore I will wait on Him. The Lord is good to those whose hope is in Him, to the one who seeks him, it is good to wait quietly, for the salvation of the Lord!"

Tomorrow is a New Day!!!!

Every other week it seems, my heart goes through alot of emotions! First I'm elated....usually because that means Holly is coming home, or Miller has gotten to play alot in his basketball game or Mitch, Britney and Layton have been over... then I'm sad...my heart thinks its going to break in two!!! usually because Holly is leaving to go back to Jackson, or Miller didn't get to play as much as he would've liked to or we haven't seen Mitch, Britney or Layton in a while!!! Ha! well....I guess you can tell where MY heart is!!!!!
The Bible tells us that where your treasure is, there your heart will be also! ( Luke 12:34) In my "old age" I'm finally beginning to learn that I want different things for my "treasures"! As the owner of an antiques shop it used to be very easy to get caught up in all kinds of treasures~if I found the perfect platter or the perfect piece of bamboo furniture....the most beautiful painting or rug...then I had truly found a treasure!!! We sought out every antique show...every market...every buying trip...our goal was to find the "perfect treasure". And rightfully so...we still strive to have the best antiques for our customers, etc... However....my goal is no longer to find something for "Me!" My goal is no longer to win the conquest of who has the best transferware or who has the best...you fill in the blank! Whatever thay may be!!! My GOAL is to work hard, strive to serve our customers and ultimately serve the Lord in the best way possible! My DESIRES have changed as well....my desires used to be so shallow and and superficial...one of my greatest pet peaves!
Years ago we were on a cruise with Jim's family. His sweet dad held a devotion in their "cabin" and asked all of us to share our goals. One by one we told of how we "wanted to lose weight", or "wanted to have better quiet times" or "wanted to begin praying together more" , etc.. In all of Tom's wisdom, he smiled at us and said, " Well those are great desires, but they are not goals!" Of course, Peggy and I rolled our eyes and laughed....and we all think about our answers much more carefully these days!!! ha ha!! but in all seriousness... I have to begun to wonder...when did my desires take over my goals? When did I stop writing down my prayer requests in my journals? When did I stop telling my closest friends my deepest longings and prayer requests? When did worry take over and my ability to trust God get put on the backburner? Is my life too busy?? What do I give up? I don't want to look back and regret anything!
I'm watching my daughter and her husband struggle with patience as they trust God to answer their longings for the store they've interviewed for....I'm watching my son who turns 17 in two days struggle with patience as HE learns patience through sports! I'm watching my oldest son...my first born, struggle with patience as he grows his business...and by gosh he's doing a great job! I'm watching my angel of a daughter in law struggle with patience as she watches Mitch!!! ha ha!! just kidding....had to lighten up a bit!!! but I am watching Britney struggle with patience with herself!! With herself as she decides what is best surgery wise for Layton... I can't even imagine!!!! I'm watching my precious husband struggle with patience as He waits on the Lord to show him what he should do to replace a lost source of income for us..... to show him what to do business wise...where he should go, what he should do.... I'm really praying for patience for me!!! For tomorrow!!! For a new day!!! I need a new day!!! I'm way too stuck in yesterday and in the things that have made me sad!!! They've only made me sad because I let them!!! I forgot what my goals were and I gave into very selfish desires!!!!! I'm praying for patience, mainly for my whole family as they endure me!!! As they endure me learning to Trust God Wholeheartedly!!!! I'm praying that Jim and I never lose our love for each other...that he will always "lasso the moon" for me just as George Bailey did in "Its a Wonderful Life"!
I'm praying that I can atleast half way measure up to Jim in being the spouse that he deserves! That may be the most humbling of prayers I could ever pray because of what a wonderful husband he is. I'm praying that I can trust God with the decisions that are made about where Holly and Brad will end up! If I'm honest, that is weighing so heavily on my heart that I can't really function like I should! and certainly not like God would have me to! If I'm honest, I want Miller to have a wonderful rest of his Jr Year and all of his Sr. year! I wish I knew what was bothering him!!!! If I'm honest...I would take away all of Mitch and Britneys struggles and hardships these past few years!!! But then, guess what???? I wouldn't have Layton!!! I wouldn't have experienced her sitting in my lap...face forward mind you!!!! for about an hour yesterday gazing...and I do mean GAZING into my eyes talking and telling me all about life!!!! Laying her head on my chest and just hugging me because she loves me!!! For nothing that I've done!! In fact...I'm almost surprised she even knows me these days I've been so wrapped up in worry over Holly and Brad and Miller!!! I confess it!!!! But those big blue eyes and those arms wrapped around you!!! well, it almost reminds us of how much God loves us!!! and how blessed we are to have a tomorrow as a new day!!! A day to start fresh....to wake up and set new goals!!! In fact, my only goals tomorrow are to wake up!!! #1...and #2 Thank God that He gave me a new day!!!!

Kahlua Chocolate Cake



1 box pudding recipe devil's food cake mix
1/2 C sugar
1/3 C oil
3 eggs
3/4 C water
1/4 C bourbon
1/2 C kahlua




3/4 C strong brewed black coffee
2 t cocoa

1/3 C chocolate chips
1/2 C butter
1 C sugar
1/3 C evaporated milk
1 1/2 C chocolate chips

mix cake mix, sugar, oil, eggs, water, bourbon, kalua , coffee and cocoa together in a mixer for 4 minutes atleast!!!
pour into a greased bundt pan and bake at 350 for 50 minutes. Let cool 10-20 minutes and put on a cake plate.

Heat butter, sugar, and evaporated milk in a saucepan. Boil for 2 minutes stirring constantly! Add chocolate chips quickly. Wisk till smooth and pour over cake.

Serve with vanilla ice cream ( or ice cream of choice!) and homemade chocolate sauce!!!
Yummy!!!!!

Homemade Chocolate Sauce
2 T butter
4 squares unsweetened chocolate
1 C sugar
dash salt
Large can evaporated milk

melt butter and chocolate together and add sugar, stir or wisk till melted..... add dash salt, gradually add evaporated milk. Let simmer at a low boil for 2 minutes....stirring...do not let burn!!!! add 1 t vanilla when done.....
This is the best in the world!!! It is Jim's mother's recipe!!! She is KNOWN for her chocolate!!!

Overnight French Toast

1 loaf Pepperidge Farm Cinnamon Raison bread torn into pieces or cut into cubes
1 8 oz. block cream cheese, room temp
8 large eggs
1 1/2 C milk
2/3 C half and half
1/2 C maple syrup
1 t cinnamon
1/2 t vanilla
powdered sugar
maple syrup

put cubed bread into a greased 9 x 13 pan. Beat cream cheese until smooth. Add eggs one at a time...beating well...I promise...this is important!!! Add milk, half and half, syrup, cinnamon and vanilla. Pour over Cinnamon Bread....Cover with foil, refrigerate overnight. Next morning, let sit out for one hour. Put in oven and bake at 375 for 45 min to 1 hour until set. serve with powdered sugar and syrup on the side!!!! So good and so easy! Its now our Christmas morning tradition!!!! Enjoy!

What if????

The question on my heart right now is What if? What if hindsight ISN'T 20/20? Do we still trust God? Do we still believe that He answered our prayers? What if we NEVER know the answers?
My sister is very well known in our family for her "What if's?" we LOVE them....if we ever hear someone begin to say "what if" we immediately all turn to each other and without words acknowledge that if Andrea were with us...this would be something funny! When we were younger it could've been...."What if I ran across the room with underwear on my head?" As we've gotten older, they haven't changed MUCH!!!! just a bit more refined!! "What if" Miller and Will hid under the bed and scared Jim half to death!!! Ok....I'm trying to give the "what ifs" I know are safe to put on here!! Anyway....you get my drift!

My point of this blog being....What if we never understand? What if we don't get the answers that we are seeking? What if we do?? in ALL things, isn't God Sovereign? Does our trust in HIm change any more or any less?
I have to look back at my own life and ponder on the things that God "let me have" and the things that He did not....The same goes for my children and what they've experienced. When I was in high school, I was not the "model" child. For reasons you should already know- I'm not going into alot of detail! However...God definitely used all of that for my good in the end...I was able to keep a VERY close watch on my own children!!! I knew their thoughts before they even had them! (much to one of them's dismay!) and now, I'm still trying to remember it all to keep up with my last one!!! He's about to be 17....a wonderful son....but Mama always knows!! (I hope he never sees this!!) Moving on...when Jim and I were about to buy our first house...he signed the papers, etc... because he knew that I wanted out of our tiny apartment with a baby and into our "dream home". However...when it came down to it, and I was about to have to close the deal while he was out of town...I promise you...the Holy Spirit spoke in volumes to my heart!!! I knew it was wrong for us to rush into that house and I knew we had to back out and I couldn't get in touch with Jim! Of course, tearfully...I called my sweet father in law and had him get in touch with Jim and we were able to back out of that contract! Do I know why? NOOOOOOO! I don't!!!!!!!! and it's ok!!!! I knew I was following God's direction and thats what ultimately gave me peace.

Moving forward ( about 20 or so years!) I look at what God has done....and hasn't done in my own children's lives. Mitch, my oldest son, married the girl that I'd always wanted him to at least ask out on a date!!!! They had a beautiful wedding, several months later found out they were expecting a precious baby girl....only to find out that she would be born with a very minor cleft lip. Ok...we worked through that, as hard as it was on them and ultimately on us because we didn't want them to have to "go through" that! When Layton was born...it was anything but minor! Why had God done this? Why hadn't he heard our prayers that it really BE very minor? She was born with a bi-lateral cleft lip AND Palette! We didn't understand! I wanted to take it all away from precious Mitch and Britney and make it better!! I couldn't! and now....Guess what? I would'nt! Now, that doesn't mean that I wish they hadn't had to endure that....it doesn't mean that I'm glad my precious grandaughter was born with that! What it DOES mean is that I've watched them trust God through it!!! It hasn't been easy...they've had their moments as we all have!!! But together, as a husband and wife...they've grown closer...they've become the best parents I've ever known! I couldn't be more proud of them! Layton is the joy of everyone's life! She is precious...she is beautiful!!! She's taught us all alot!!! She's teaching her parents about patience!!! :) and that has NOTHING to do with a cleft!! :)

I've watched Holly go through difficult times with her best friend in high school....I've watched her cry her heart out when Brad thought they should stop dating! ( I know he's going to hate this part!) but its true...I watched her die on my sofa...I died with her!!! She dealt with it, but was heartbroken! Brad was going through a difficult time with college and baseball....very understandable! but as a mom...when you know that was your daughter's soul mate...that was really hard!!! It may have been the longest 3 days or so of my life!!! Kind of like now as I watch them wait....that's all I'm doing..is watch them wait for an answer! Praise the Lord, Brad came to his sences!!!!! Praise the Lord they were married after 6 or so years of dating! Now we wait...Please Lord, HELP us wait on You!!! However...as much as I didn't want them to move to Jackson, MS....I've watched them grow immensely in their relationship as a young married couple and in their relationship with the Lord....Now, would I have wanted to take that away from them? NO!!!! Just like I wouldn't want to take away from Mitch and Britney, the lessons God has taught them....the blessings they have received from helping other families deal with cleft babies!! Thats a HUGE blessing!!!!!!

Now I'm watching and learning as I raise my last teenager! The unexpected joy of our lives, the blessing we had truthfully prayed for! at least for 7 years because that's the age difference between he and Holly... it's 10 years between Mitch and Miller....but it's fun!!! God knew when the timing would be perfect! Did I understand losing a baby in between??? Of course not!!! But I'm forever grateful that Miller was born WHEN he was born! He's the same age as 2 of my nephews! He's the same age as most of my very best friend's sons and now they are all best friends!!! How fun!!! Is watching a 17 year old boy struggle over certain issues fun? NO!!! Emphatically NO because he doesn't talk!!! We just GUESS!!! and it's like...ok...you got it, mom!! and then we move on!!! Its been a struggle and a half this past year with sports... a back injury, etc... good grief!! I'm about to get too old for this!!! And THEN!!!!! just when I think I can't possibly take anything else to disappoint Miller...to make life even the tiniest, wee bitiest hard for him ( and i hope you know i'm trying to be funny....that's just life with Miller because he's the baby!! I'm working on it!! I promise!) I get a text....from Jim....just this very moment!!! Miller killed a deer with his bow!!! WOW!!!! LIFE IS GOOD NOW!!!!!!!!!!!!!!THANK YOU, LORD!!!!!! HE WILL BE IN A GOOD MOOD!!!!! ok....that was really just for my benefit!! but you see... Miller has faced alot of minor disappointments these past few months....He hasn't had joy in his heart or on his face for a while!! For a mom...that gets old!!! So this text I just received...is a gift from God to ME!!!! Miller just thinks its for him!! ha ha!!
Ok...back to reality!!! the joy that I began to really see on Miller's face came last week!! It came after many nights of tears...of struggling with pride issues...with alot of things that I will not go into for the sake of my precious son... but you get my drift... it's hard for any of us to struggle with issues and not feel good about ourselves! It was always so hard for me to open up to my parents and talk...and be vulnerable! But the joy of watching Miller "get over himself" and realize that life isn't all about a 17 year old boy named Miller... to see joy on his face BECAUSE it was in his heart....That was God's powerful work in him....yes, Jim and I were the vessels He used to help Miller get to this point, just like we were the vessels to help our other children get to the point in their lives...many times, as they dealt with unanswered prayers, or disappointments.

But, thats where it ends...we are simply vessels in our children's lives..to teach them about God and about His Sovereignty and His love and His righteousness...will they understand when they have hurts arise? When they have unanswered prayers or doubt His love for them? The only thing I know for certain is this.... hindsight is not ALWAYS 20/20! There will be times in our lives (and have been!) that we cannot explain why God let a certain thing happen... Why did Coach Walker have to die? Especially before Holly and Brad's wedding? He's the one that wanted them to date in the first place!!! Why did Layton have to be born with a cleft at all??? Why did Mitch and Britney have to endure that with their first child? Why did Uncle John have to get cancer and leave us way too soon??? yes, I know he's touched many lives, but we miss him!!! We miss Coach Walker!!! Why does Miller have to go through feeling bad about himself? I know thats normal for a teenager...but its driving me crazy and aging me faster than anything I've ever seen!!! ha ha!! And actually, I was VERY, VERY wrong in saying the only thing I know for certain is hindsight isn't always 20/20!!

Thankfully, the only thing I TRULY know for certain is this!!! John 3 :16 " FOR GOD SO LOVED THE WORLD THAT HE GAVE HIS ONLY SON! THAT WHOEVER BELIEVES IN HIM SHOULD NOT PERISH BUT HAVE EVERLASTING LIFE"
Romans 8:28 " AND WE KNOW THAT FOR THOSE WHO LOVE GOD ALL THINGS WORK TOGETHER FOR GOOD, FOR THOSE WHO ARE CALLED ACCORDING TO HIS PURPOSE!"

My Pantry


One would think that a pantry would be a simple thing!!! Until I read and saw some of the posts that people had put up on Relish Magazines site!!! WOW!!! That took me down memory lane!!!! The blue and white corning ware dish that my mom made my favorite birthday meal in every year of my life until I was married, and then some!!. the McKenzie Child's dishes that I've collected over the years with my husband and children giving them to me as gifts!!! The cast iron skillets i got from my Grandmother!!!! and now.... the wonderful clay pottery that my husband gave me for Christmas!!!!! He picked it out all by himself!!! He knew I was trying to replace a special piece of pottery that I cook in all the time for our family but because I broke the handle years ago... I would NEVER serve this in public in this dish!!! WOW!!!! bet he didn't know he has started me on a new quest of collecting!!! and...trust me...I'm the queen of collecting! I own an antiques shop and am known, unfortunately, for me...as the transferware person...the creamware person, the ironstone person!!! Now.... I guess I'm going to be known as the La Chamba person!!! or the person that loves to cook with clay!!! OH MY!!!! wonder what Jim will give me for my birthday!!!! Probably a "do not pass go card on collecting!!!!! "

"Hoppin John!" 2011


I've never made Hoppin John....in fact....I've actually never thought about it until this year!!! My husband gave me a piece of Columbian Clay cookware and I just couldn't resist making it this year!!!! Here is the recipe...and trust me...it gets better as it sits!!!!
1 lb bag of dried black eyed peas
6 C water
1/2 onion, sliced in chunks
2 heaping teaspoons minced garlic
2 small smoked ham hocks
1 bay leaf

rinse and sort peas....add rest of ingredients and cook uncovered or semi covered for about 2 hours or until almost tender....you don't want peas to be completely done because they still have some cooking to do!!!!

when done, drain peas in a colander and let sit until ready to add to rest of ingredients! Discard bay leaf and onion. Dice ham hocks and add to peas in colander.

Meanwhile
dice....1 medium red bell pepper, 1/2 green bell pepper, 3 celery stalks, 1 large onion. Saute in 2 heaping T olive oil...in fact, put lid on pan and let "sweat" as it sautees! Also.... dice in 1 inch pieces 1 lb smoked sausage. ( I used Oscar Meyer Turkey Sausage because I'm tired of fat!) it was still great! you will add this in a little bit!!
To the veggies in the pan add several slices jalopena peppers, 2 t Creole seasoning, 1/2 t dried thyme leaves, 3/4 t cumin, 3/4 t salt. Stir until coated...add 2 C water...or chicken stock... I used water and it was great! add 1can rotel tomatoes and green chilies...and I C long grain white rice and let simmer until rice is almost tender. Add diced ham, diced sausage and peas..... Let simmer until YOU think its ready! At the end....I felt it was a bit too "dry" so I added 1 can of diced tomatoes...undrained and let cook on very low for about 15 minutes!!! It was perfect at this point!!!!

My whole family loved it!!! which is saying alot!!!! We put grated cheddar cheese on top of each person's portion and it was wonderful! It calls for sliced green onions but its pretty spicy already!!! Enjoy!!! and Happy New Year!!!!
