4 "tomatoes on the vine"
5 Kavato tomatoes ( chocolate colored)
1/2 pint grape tomatoes, halved
feel free to use any good red tomatoes that you like and mix them with an heirloom or two! Such at the Kavato! If my Cherokee Purples or Banana Legs were ripe I would've used those.
Display tomatoes on a large platter that can hold a vinaigrette dressing.
Roast in the oven: 2-3 C frozen corn shoe peg corn kernels with one chopped purple onion. Toss with 1 T olive oil and roast in the oven for 45 minutes stirring occasionally. Take out when it starts to brown. Sprinkle with kosher salt and pepper to taste. When done, let cool to room temp and sprinkle evenly over the tomatoes. Sprinkle a good handful of fresh basil that has been chopped all over. Drizzle the dressing over all and serve. Let people take what they want and serve the extra vinaigrette on the side. So Yummy! Would be great with fresh mozzarella as well!
Balsamic Vinaigrette
1/4 C balsamic vinegar
3/4 C olive oil
6 fresh basil leaves, chopped
1/4 t salt
1/4 t pepper
2 green onions ( I left those out this time simply because of the purple onion in the corn mixture)

Divine Blueberries! Makes for an easy, delicious blueberry cobbler!!!
4 C fresh blueberries
1/4 C sugar
1 stick butter, softened
3/4 C sugar
1 C flour
1 t baking powder
1/2 t salt
1/2 C milk
grease 3 qt. casserole dish or 9 x 13...put in blueberries and sprinkle 1/4 C sugar over them. Mix rest of ingredients and pour over blueberries and spread evenly. ( I did 1 1/2 x this part of the recipe and it was the best yet!)
* In a 4 C glass measuring cup or bowl, add 1 C COLD water, 1 t cornstarch and 3/4 C sugar...heat in microwave on high for 2-3 minutes or until boiling. Carefully pour over all in pan.
Bake at 375 for 40-45 minutes...will look brown but it's suppose to!! Serve warm with vanilla ice cream.

a few "before" shots of the garden....the only time I've ever been halfway successful with a garden! Luckily, we started out small!!
If I could just catch the "Mama" rabbit with my camera! there are still alot of babies out there and the parents as well! just never have the camera with me to prove it!
Aww... the rabbit is so cute!
ReplyDeleteThese recipes look great! Going to try this weekend.
Where do you get your heirloom tomatoes?

Thanks, Teresa! The ones that we planted I got at the farmer's market at Pepper Place and the ones I served last night I got from Whole Foods. They were incredible! Can't wait for the leftovers tomorrow night!
ReplyDeleteLooks delicious!! Love fresh fruits and vegetables!
ReplyDeleteI'm so jealous of your tomatoes! It's just too cold here in the PNW to grow tomatoes on the water (and I've tried every possible way).
ReplyDeleteand i'm jealous of your cool weather! the grass is always greener!! ha ha! I've missed hearing from you...wonder if our other blogging members are still interested? Life has gotten so busy! Why does that have to happen?
