This was a wonderful tomato soup....not for the faint of heart mind you!!! It is extremely "tomatoey"!! In fact...the one person that I am sure would love it is my daughter in law! She is my tomato lover!!
With that in mind...Enjoy!!!!
1 small onion chopped
2 cloves garlic, minced
1-2 T olive oil
1-2 T unsalted butter
1 can Fire Roasted Tomatoes, drained and juices reserved
1 can Diced tomatoes, drained and juices reserved
2 14 oz cans chicken broth
1 7 oz jar sundried tomatoes in oil, drained and chopped finely in food processor
2 T concentrated tomato paste
2 sprigs thyme ( or, 1 t dried thyme)
basil, salt and pepper to taste
1/2 C cream or half and half
And here is the blended version after the cream has been added!!!!
saute onion and garlic in butter and olive oil till softened. Add canned tomatoes, sundried tomatoes, reserved juice and chicken broth and water to make 5-6 C liquid, and spices. Simmer 20-30 minutes covered. At this point you can either puree in batches in blender or use a handheld device to blend soup while in pan. Add tomato paste and stir till blended and heated through. Add cream or half and half...taste to your likes with salt, pepper, basil, thyme, etc.....
Serve with a dollop of sour cream and Savory Herb Muffins or bread of choice! Enjoy!
